Avocado Mayonnaise (Paleo, Whole30, Low Carb, Vegan) is extremely creamy and delicious option for those who can't (or don't want to) eat eggs.

Ingredients
  • ½ avocado
  • ½ cup mellow olive oil
  • 2 tsp Dijon mustard
  • ½ tsp lemon juice
  • Salt and pepper
Instructions
  1. Place all the ingredients in a narrow jar and blend everything until smooth.
  2. Use as classic mayonnaise.
