Coriander Pesto (Paleo, Whole30, Low Carb, Vegan)

Coriander Pesto (Paleo, Whole30, Low Carb, Vegan)

Pesto is one of these culinary creations which can be made out of pretty much anything. I know, the basil pesto is the classic and still probably the best. However, basil can be pretty pricey and therefore the whole pesto situation gets a bit noble. And yes, you can get a jar of pesto for a little money in the supermarket nowadays, but have you ever read the ingredient list? It’s usually never ending. With stuff you simply don’t need in your daily diet. So what to do to enjoy a bit of this delicacy without breaking your bank account? Try something new and swap the basil for a different cheaper herb and play with the taste. Like in thisĀ Coriander Pesto (Paleo, Whole30, Low Carb, Vegan).

Avocado Mayonnaise (Paleo, Whole30, Low Carb, Vegan)

A few weeks ago I decided to cut down my consumption of eggs and a few other things. My hormones went a bit wild and my skin started breaking out a lot, so I thought I would help the body to get back to normal faster and cut off some possible triggers. But then the horror came across my mind. What would life be without a mayonnaise? How am I going to survive this? Well, don’t worry, crisis averted. Because I made Avocado Mayonnaise (Paleo, Whole30, Low Carb, Vegan) my friends. Extremely creamy and a delicious option for those who can’t (or don’t want to) eat eggs.

Carrot Cake Porridge (Paleo, Low Carb, Vegan)

We are slowly getting into the winter season here in Queensland and the mornings are starting to be a bit chilly. I know I know, don’t get me wrong, it’s nothing in compare with winter in Europe. But it’s enough to put some warm socks on and definitely crave different foods in the morning. Something warming and comforting. Something easy to digest. Homemade Chocolate Granola (Paleo, Low Carb, Vegan)

Homemade Chocolate Granola (Paleo, Low Carb, Vegan)

Lately I’ve been craving “sweet” breakfasts quite a bit. And if you have been following me for a while, especially on Instagram where I post my very realistic meals, you would know that it’s not something very usual for me. Normally I would have a plate with veggies and protein for brekky and be very happy with that. However I’ve decided to listen to my body and the cravings and give it something different every now and then. But no, I still wouldn’t have doughnuts for breakfast. That’s definitely not worth it. If I crave a “sweet” brekky I would make a nice gluten-free porridge instead (for example the Chocolate Porridge) or as lately my favourite Homemade Chocolate Granola (Paleo, Low Carb, Vegan) with coconut yoghurt. So if you are looking for some healthy breakfast inspiration you are at the right spot.

Fennel And Butternut Squash Puree (Paleo, Whole30, Low Carb)

Fennel can be quite strong in flavour when by itself and that sets a lot of people off. But combine it with the sweetness of butternut squash and creaminess of ghee and you’ll find a smooth yet decadent side dish. It’s perfect with grilled and roasted meats where it almost plays the main role. However it also perfectly supports full flavours of more exotic dishes like curries and aromatic stews.
