I can’t believe the weekend is almost over again. Last month and a half just flew by, I swear. But I love it. I’m quite busy with my new job and settling in the new life, but I wouldn’t change a thing about it. It feels so right at this moment. However I still don’t post as much as I would like. But I’m getting better with my schedule these days. I think that what also helps is that I try to make as much food prep and batch cook during one of my days off. So I can make sure that we will still eat healthy during the week, even when we are short on time. And that we can use the precious time we have left to enjoy ourselves. Or write a blog post 🙂
Weekend is almost knocking on the door and for those lucky of you it means a well deserved time off. I will save myself this privilege for Monday and Tuesday. Which is actually a really great time to be off as there is less people everywhere. Which really suits my introverted self. However, back to the weekenders. Happy Monday everyone! What about a little treat for surviving the first day of the week? I think we deserve it, right? And I know it’s been a wile since I posted a dessert recipe. Actually it’s been a while since I posted any recipe. But after applying for the Partner visa and waiting for the bridging visas to start I’m finally allowed to work here in Australia. And I am actually finally working! And it feels great to have a schedule back in my life. But with a work schedule I just need to make a system in my personal time. So sorry for those of you who are waiting for the new recipes. I promise to do better in the future and spend more time on the blog again and post more often.
When you go to a Greek restaurant, which are your to go meals? I usually try to taste different foods as much as possible, but if I should pick my favourites, it would definitely be Moussaka, grilled octopus and last but not least Gyros. Chicken lamb or beef, give me all. Preferably as the whole set with some flat bread and Tzatziki too.
Anyway, by now you could probably notice that I am all about creating healhier (paleo-ish) versions of my favourite dishes. That’s why I decided to make a Chicken Gyros With Tzatziki at home as well. And I didn’t even miss on the bread. To draw in the detail I used Coconut Flour Savory Pancakes as the base for all the goodness which I am going to share with you below.
