After a couple of weeks I’m back with another Asian classic, this time visiting the kitchens of Thailand (at least in my mind).
Today I’ve decided to share my version of Pad Thai, because it’s one of the most popular Thai dishes, yet not many people make it at home. But it’s much easier than you think. And of course I tuned the recipe up a bit, so it’s as nutritious as possible. That’s why I’m using spaghetti squash instead of noodles. Because it’s delicious, healthy and super easy to cook with. If you can get your mitts on this special variety of squash, you should definitely give my Spaghetti Squash Pad Thai (Paleo, Whole30, Low Carb) a try. It’s packed with fresh amazing flavours and nutrients.
I just love Asian cuisine. But. It’s a known fact that most of the restaurants are using lots of sugar and sauces with crazy amounts of ingredients to add more flavour to the dishes. I always thought that making a homemade coconut yoghurt is a little bit of alchemy. All the recipes sounded pretty complicated, included too many ingredients and a lot of work and I just couldn’t be bothered. But store-bought yoghurts usually contain so many unnecessary ingredients like starches and added sugars and also don’t seem to have many of the salutary probiotics which you expect from a yoghurt. And plainly they usually don’t taste very good. Well, unless you spend half of your salary on one tub. There are some very tasty coconut yoghurts out there, but their price can be too much for some of us. So I decided it’s time to give the home fermenting process a proper go.

I would like to say that I’m posting a soup recipe because it’s winter and it’s cold and soup is a perfect dish for this weather. That’s the right introduction, isn’t it? But well, that would be a lie. It is indeed winter in Australia right now. But it’s definitely not cold. I actually can’t believe how lucky we are here in Queensland with the weather. I know, beetroot brownies are nothing new. But have you actually ever try them? I found out that many of the recipes are just containing so many ingredients. And you could probably noticed that I like things as simple as possible. Minimum ingredients and minimal effort. That’s me. So I ditched few of the traditional ingredients and tried to create an easy, healthy and tasty version of the beetroot brownies myself. And after few attempts came up with these Beetroot Brownies which I’m finally very happy with. Because despite the fact that there is not any gluten, dairy or sugar included, they taste damn delicious. And don’t worry, no beetroot aftertaste. Just beautiful gooey chocolate goodness.
Pesto is one of these culinary creations which can be made out of pretty much anything. I know, the basil pesto is the classic and still probably the best. However, basil can be pretty pricey and therefore the whole pesto situation gets a bit noble. And yes, you can get a jar of pesto for a little money in the supermarket nowadays, but have you ever read the ingredient list? It’s usually never ending. With stuff you simply don’t need in your daily diet. So what to do to enjoy a bit of this delicacy without breaking your bank account?
