In my family Sundays are usually saved for a big family lunch. We would get together and spend hours talking and eating and simply having a beautiful day. The meal would almost always include some nibbles to start, then good healthy soup, hearty main meal and of course a dessert. And that’s why I chose this day to share a new dessert recipe with you guys. Because even if I am halfway around the world now, I’m always thinking about my family and amazing days like these. And all the good food we had together 🙂 However, as you probably noticed already, this blog is mainly about real food and healthy choices. So these Paleo Custard Tarts are no exception. They would make for a perfect treat after a Sunday lunch which won’t make you feel bad, because they are low in carbs, high in protein and also dairy free.

Grain Free Pumpernickel Bread

I’ve already admitted here several times that I have a weakness for baked goodies. Especially bread of any kind. But now more than ever I am aware of what I’m eating and how often. And I am thankful for this awakening to the Whole30 I did this May. When I did the programme I had a feeling that nothing changed. But when I look back there is so many things that changed for me. Not only I am a bit leaner (nice bonus) and I have almost zero stomach aches (very usual for me before) but I know what I can afford and what is just too much for me. And I’m even more interested in nutrition than before. So yes, I would have normal bread every now and then, because I know that small amounts of gluten doesn’t upset me. But I also know that there is not much nutrition in those baked goodies. That’s why I made this Grain Free Pumpernickel Bread to accompany my favourite spreads. It’s full of Omega-3 fatty acids, antioxidants, fibre, protein and other nutrients and of course tastes great, especially when slightly toasted.

So I’ve just created the best meatloaf ever. Da Best! At least the best one I’ve ever had. Well, I had a feeling that combining cheddar, bacon and jalapeno can’t go wrong. But it ended up even better than I could ever imagine. I could just keep eating this thing. It’s so juicy with so many flavours, it almost feels like I’m cheating on the healthy lifestyle with a huge badass cheeseburger. Well, I do every now and then but at home I try to eat as healthy as possible. Because I still believe that the balance is pretty important too. Anyway, if you are looking for an easy recipe for the busy week days, this is it. You can make one big meatloaf and enjoy it for several days, just switching the sides. At least that’s what works for me.

I’ve became obsessed with pumpkins lately. I could have pumpkin as a part of every meal. Because it’s such a versatile vegetable and it’s so savory and filling. Which is probably what I like about it the most, that I’m not starving half an hour after lunch. However, my husband unfortunately doesn’t seem to be so thrilled about pumpkin as I am. He actually said that he can’t see anymore pumpkins in our kitchen. Challenge accepted. I just had to prove him that pumpkin is awesome. So I decided to come up with this Roasted Pumpkin Gnocchi recipe. Well, he is still not jumping with joy when I come from the shops with another pumpkin in my bag. But he certainly loved the gnocchi. I can’t believe the weekend is almost over again. Last month and a half just flew by, I swear. But I love it. I’m quite busy with my new job and settling in the new life, but I wouldn’t change a thing about it. It feels so right at this moment. However I still don’t post as much as I would like. But I’m getting better with my schedule these days. I think that what also helps is that I try to make as much food prep and batch cook during one of my days off. So I can make sure that we will still eat healthy during the week, even when we are short on time. And that we can use the precious time we have left to enjoy ourselves. Or write a blog post 🙂

When you go to a Greek restaurant, which are your to go meals? I usually try to taste different foods as much as possible, but if I should pick my favourites, it would definitely be Moussaka, grilled octopus and last but not least Gyros. Chicken lamb or beef, give me all. Preferably as the whole set with some flat bread and Tzatziki too.

Anyway, by now you could probably notice that I am all about creating healhier (paleo-ish) versions of my favourite dishes. That’s why I decided to make a Chicken Gyros With Tzatziki at home as well. And I didn’t even miss on the bread. To draw in the detail I used Coconut Flour Savory Pancakes as the base for all the goodness which I am going to share with you below.

Day 28 was probably the laziest from the entire Whole30. I was still bit sick and tired so I just spent all day at home, doing nothing. Well, I actually wrote about the two previous days. Which is a quite an achievement for me due to the condition I was in this whole weekend. And also considering the fact that typing still takes a bit of time for me. I should finally find some course for that. Although I keep talking about it for few years, I’m still using maximum 4 fingers to type, while desperately searching for the letters on the keyboard all the time. I am bit old school in some things, I know.
