When you go to a Greek restaurant, which are your to go meals? I usually try to taste different foods as much as possible, but if I should pick my favourites, it would definitely be Moussaka, grilled octopus and last but not least Gyros. Chicken lamb or beef, give me all. Preferably as the whole set with some flat bread and Tzatziki too.
Anyway, by now you could probably notice that I am all about creating healhier (paleo-ish) versions of my favourite dishes. That’s why I decided to make a Chicken Gyros With Tzatziki at home as well. And I didn’t even miss on the bread. To draw in the detail I used Coconut Flour Savory Pancakes as the base for all the goodness which I am going to share with you below.
Because Monday and Tuesday is generally a weekend for us, it means there is time for some good homemade meals and snacks. And maybe a glass of wine now when the Whole30 is finished. And what else pairs so good with a glass of wine than a smooth chicken liver and apple pate?
Once in a while awful anxiety overwhelms my mind badly and changes the easy-going optimistic girl to the biggest drama queen in the world. Of course it doesn’t come from nowhere. But I am usually good dealing with little things. Even with some big things, still keeping my mind straight. But it has to be only few of them at a time. Because when they build up and the boundaries are exceeded I just can’t control myself. I would burst out. I would cry and shout and give some people very hard time. Thankfully it happens only once in a blue moon, otherwise I probably wouldn’t be married anymore.
I always loved to try new meals and ingredients when possible. But it wasn’t so easy at all the times. Just so you know, I am from a small Czech town with 7000 residents, where the new is not accepted so easily sometimes. Just for example, apart from Czech restaurants, we have one Chinese restaurant and few pizza places in my hometown. And that’s as far as the curiosity of new things can get. I believe that these days it might be better and the young people are more open to the new flavours. But it will probably still take some time before the food mentality changes here.
I love cooking with minced meat. There is so many possibilities how to turn it into delicious meals. Like in the Shepherd’s Pie With Swede. Or the Eggplant Lasagna Bolognese. Or like in these Ginger Pork Meatballs. My favourite meatballs of all the time.
As much as I love soups, sometimes I have to spare this feeling for stews too. Or pretty much anything with a bit of liquid from one pot. Curry or goulash attending the competition of a perfect meal as well. There is nothing better on a cold rainy day than a nice bowl of comforting hot food filled with as many healthy things as your pantry offers.
Would you like to add more veggies to your breakfast game, but can’t really handle them raw in the morning? Trust me, you are not alone here. I would probably get sick if I was supposed to chew on half of raw capsicum for brekky. However, like with a wave of a magic wand, I can eat almost the whole thing if roasted. Preferably as a part of hash. Like in this Beetroot and Sweet Potato Hash.
Are you a sweet breakfast person? Or do you better give way to the beautiful satisfying savory heaven like eggs and bacon in the morning? Yeah, I guess you can say which brekky I prefer. The only sweet exception would be probably breakfast bowls as you can see in Chocolate Protein Smoothie Bowl. However when I have the time I would definitely go for the salty version. Like I did this morning with the Coconut Flour Savory Pancakes.
It’s still such warm weather here in Australia which for me means lots of BBQ and lighter meals. That’s why I made the Sticky Ginger Chicken Wings yesterday (we were so hungry that I just wasn’t able to make pictures, but I will be definitely making the wings soon again) and this Asian Style Coleslaw on a side. At least the salad is served cold so I could snap a couple pics before dinner.
It’s been almost a month since my last post. I can’t believe that. Time went so fast. Well but I definitely got my lesson about planning the posting schedule better the next time. It’s not that I didn’t feel like writing. If you followed my Instagram or Facebook, you would know that I travelled a bit thru Thailand the last few weeks. And as much as I thought I would be able to write and post while there, it did not happened at all.
