Chocolate Cashew Bliss Balls (Paleo, Low Carb, Vegan)

Chocolate Cashew Bliss Balls (Paleo, Low Carb, Vegan)

Who doesn’t love bliss balls (protein balls, energy bites, you-name-it)? They are the perfect little snack to accommodate your afternoon coffee, to grab when you need to satisfy that sweet craving or simply provide you with little bit of extra energy when needed.

However, most of the bliss balls you get in cafes and shops are just jampacked with sugar and often other unnecessary ingredients too. To be clear, I’m not following a keto lifestyle or saying that all carbs are bad for us. But I do agree with the claim that we eat many more carbs than we need to. And it’s actually super easy to overdo it even with the healthy treats. Because most of them are based on dates or other dried fruits which are super high in carbs and will most likely leave you even hungrier than before. That’s why it’s always good to read labels. Or even better – make the goodies at home. Because there can’t be any easier treat to make at home than bliss balls. Try my Chocolate Cashew Bliss Balls (Paleo, Low Carb, Vegan) and see it for yourself đŸ™‚

Indian Spiced Porridge (Paleo, Low Carb, Vegan)

Indian Spiced Porridge (Paleo, Low Carb, Vegan)

It’s been almost one year since I posted a recipe for the Carrot Cake Porridge. Talking about chilly mornings and comfort foods. Well, here we are again. Slowly, but surely the winter is coming to the Gold Coast. And even though the weather is still absolutely stunning during the day, the mornings are getting a bit colder. And that means my body is craving all the comfort food. All the time… But that’s a different story. Anyway, I also have to wake up pretty early for my work and can’t really skip breakfast, so it needs to be something easy to digest. And I think porridge just ticks all the boxes. And this Indian Spiced Porridge (Paleo, Low Carb, Vegan) is the bomb at the moment. No sugar, no gluten, just good things like seeds and coconut cream, beautiful warming spices and of course some veggies too. Because that wouldn’t be me if I didn’t try to sneak some veg into everything.

Savoury Cauliflower Waffles (Paleo, Whole30, Low Carb, Vegan)

Savoury Cauliflower Waffles (Paleo, Whole30, Low Carb, Vegan)

It’s not a secret here that I prefer to follow the Paleo way of eating, concentrating on whole, nutritious foods. That’s why I started this blog and share my kitchen creations regularly on my Instagram too. To collect my own recipes and hopefully inspire others. So I was super thrilled when the creators of Paleo Menu asked me to develop a whole weeks worth of recipes focusing on good whole ingredients for them. A perfect chance for me to show even more people that eating healthy can be fun and really easy too.

They call it Dream Paleo Week and I think not only the name, but the whole idea is amazing. If you sign up to their email list, every week you’ll receive recipes from passionate Paleo foodies like myself. So many fresh ideas every week! And yes, these Savoury Cauliflower Waffles (Paleo, Whole30, Low Carb, Vegan) are part of the weekly menu.

Lime Bites (Paleo, Low Carb, Vegan)

Lime Bites (Paleo, Low Carb, Vegan)

This might not be the most classic Christmas recipe you can whip up this year, but that’s the thing. Why not? Why not to make something different? Everyone is making rum balls. Don’t get me wrong, I will still make my version of Rum Balls too. But at a same time I felt like making something new. Something more suitable for the hot Australian weather. Something with refreshing tropical flavour, yet still in small bite sizes perfect for the Christmas nibbling. And with citrus fruits in season I simply couldn’t resist. So here are the Lime Bites (Paleo, Low Carb, Vegan), perfect little treat after your Christmas lunch or just during the day to hush the hanger (because no one wants to be hungry and cranky during Christmas).

Pumpkin Cocoa Pudding (Paleo, Low Carb, Vegan)

Pumpkin Cocoa Pudding (Paleo, Low Carb, Vegan)

With Halloween around the corner it’s all about pumpkin lately. And even though I’m not always following the mainstream, this time I don’t want to miss the wagon, because pumpkin is actually my favourite vegetable. It’s so versatile. You can have it just roasted as a perfect side to your meats, pureed for extra fanciness or use it in desserts for a perfect texture and natural sweetness. So here is my recipe for super easy Pumpkin Cocoa Pudding (Paleo, Low Carb, Vegan).

Homemade Coconut Yoghurt (Paleo, Low Carb, Vegan)

Homemade Coconut Yoghurt (Paleo, Low Carb, Vegan)

I always thought that making a homemade coconut yoghurt is a little bit of alchemy. All the recipes sounded pretty complicated, included too many ingredients and a lot of work and I just couldn’t be bothered. But store-bought yoghurts usually contain so many unnecessary ingredients like starches and added sugars and also don’t seem to have many of the salutary probiotics which you expect from a yoghurt. And plainly they usually don’t taste very good. Well, unless you spend half of your salary on one tub. There are some very tasty coconut yoghurts out there, but their price can be too much for some of us. So I decided it’s time to give the home fermenting process a proper go.

Banana Bread (Paleo, Sugar-Free, Vegan)

Banana Bread (Paleo, Sugar-Free, Vegan)

Ok, this is definitely not a low carb recipe. But no one is perfect, right? And I still believe in the fact that fruit is better for us than some (artificial) sweeteners. In healthy amounts of course. I know that especially banana is super full of natural carbohydrates, so it’s not in my diet very often. But it also contains so many vitamins and minerals. And it’s nice to treat myself every now and then.

And that’s exactly what this Banana Bread (Paleo, Sugar-Free, Vegan) represents for me. Balance. Balance in my lifestyle when I’m not obsessed with every gram of sugar I eat and I enjoy some healthy treat when I feel like it. It’s my version of intuitive eating and food freedom. Because when I don’t forbid myself from eating anything, my choices are actually much better than if I have a feeling that something is not allowed (and therefore super tempting).

Broccoli And Pumpkin Salad (Paleo, Whole30, Low Carb, Vegan)

Broccoli And Pumpkin Salad (Paleo, Whole30, Low Crab, Vegan)

I just made the best salad ever. I honestly can’t stop drooling over it. It’s THAT good. So if you are looking for a side dish which would complement your weekend grilled specials, look nowhere else. I’ve got you covered with the Broccoli And Pumpkin Salad (Paleo, Whole30, Low Crab, Vegan). Also, there is actually no raw vegetable in this salad. So it doesn’t have that over healthy (and super boring) feel. But it’s crispy, fun and savoury. And it’s so much easier to digest. Honestly, you just have to try it. And don’t tell me if you don’t like it. Because it’s good. I know it đŸ™‚

Beetroot Brownies (Paleo, Low Carb, Vegan)

Beetroot Brownies (Paleo, Low Carb, Vegan)

I know, beetroot brownies are nothing new. But have you actually ever try them? I found out that many of the recipes are just containing so many ingredients. And you could probably noticed that I like things as simple as possible. Minimum ingredients and minimal effort. That’s me. So I ditched few of the traditional ingredients and tried to create an easy, healthy and tasty version of the beetroot brownies myself. And after few attempts came up with these Beetroot Brownies which I’m finally very happy with. Because despite the fact that there is not any gluten, dairy or sugar included, they taste damn delicious. And don’t worry, no beetroot aftertaste. Just beautiful gooey chocolate goodness.

Coriander Pesto (Paleo, Whole30, Low Carb, Vegan)

Coriander Pesto (Paleo, Whole30, Low Carb, Vegan)

Pesto is one of these culinary creations which can be made out of pretty much anything. I know, the basil pesto is the classic and still probably the best. However, basil can be pretty pricey and therefore the whole pesto situation gets a bit noble. And yes, you can get a jar of pesto for a little money in the supermarket nowadays, but have you ever read the ingredient list? It’s usually never ending. With stuff you simply don’t need in your daily diet. So what to do to enjoy a bit of this delicacy without breaking your bank account? Try something new and swap the basil for a different cheaper herb and play with the taste. Like in this Coriander Pesto (Paleo, Whole30, Low Carb, Vegan).
